Zucchini Roll

Ingredients

  • 4 large zucchinis
  • 250 g ricotta
  • 100 g cooked ham
  • 50 g grated Parmesan
  • Chives
  • Salt and pepper
  • Extra virgin olive oil

Preparation

  1. Start by washing the zucchinis and slicing them thinly lengthwise. You can use a mandoline or a vegetable peeler to get uniform slices.

  2. Heat a grill and grill the zucchini slices until lightly golden on both sides. Let them cool.

  3. Meanwhile, prepare the filling by mixing the ricotta in a bowl with the grated Parmesan, chopped chives, salt, and pepper. If you have specific tastes, you can add other herbs to your liking.

  4. Lay the zucchini slices on a work surface and place a slice of cooked ham on each, then spread a layer of ricotta filling on top.

  5. Gently roll the zucchinis starting from the narrowest end, until you get compact rolls.

  6. If necessary, secure the rolls with a toothpick to prevent them from opening.

  7. Arrange the zucchini rolls on a serving plate and, if desired, drizzle with a little extra virgin olive oil before serving.
