Amarena Meringue Ice Cream

Amarena meringata is an extremely delicious dessert that is relatively easy to prepare. It consists of a crunchy layer of meringue combined with the creaminess of ice cream and the intense flavor of amarene cherries. Here’s how to make it:

Ingredients

  • 4 large meringues (you can buy them ready-made or make them at home)
  • 1 liter of cream ice cream (or vanilla)
  • 300 grams of amarene cherries in syrup (or mixed berries if you prefer)
  • Amarene cherries for decoration
  • Amarena syrup

Preparation

  1. If making the meringues at home, beat the egg whites with a pinch of salt until foamy, then gradually add the powdered sugar until the desired consistency is reached. Spread the meringues on a baking sheet lined with parchment paper and bake at 100 °C for about 1-2 hours, until crisp.
  2. Once the meringues are ready, take a container for ice cream cake (or a springform pan) and make a layer with the crumbled meringue on the bottom.
  3. Over the meringue, pour a layer of previously softened cream ice cream.
  4. Evenly distribute the amarene cherries in syrup (setting some aside for decoration) over the ice cream and, if desired, add a bit of syrup to intensify the flavor.
  5. Add another layer of crumbled meringue and then cover with an additional layer of cream ice cream.
  6. Place the meringata in the freezer for at least 2-3 hours to firm up.
  7. Before serving, decorate with the reserved amarene cherries and, if desired, drizzle with a bit of amarena syrup.

A tip: to prevent the ice cream from melting while assembling the meringata, work quickly and keep the ice cream in the freezer until ready to use.

**### Fun Fact ** Amarene cherries are known for their unique flavor that pairs perfectly with the sweetness of meringue and the creaminess of ice cream. This dessert is ideal for hot days, where the combination of cold and sweetness is truly refreshing. Additionally, the red color of the amarene cherries against the white of the ice cream and meringue makes it visually appealing as well.
