Amarena Mousse

Amarena mousse is a delicate and indulgent spoon dessert that combines the creaminess of mousse with the slightly tart flavor of amarene cherries. Here’s how to prepare it:

Ingredients

  • 250 ml fresh whipping cream
  • 200 g amarene cherries in syrup
  • 80 g powdered sugar
  • 2 sheets of gelatin (or 4 g powdered gelatin)
  • 1 tablespoon amarena liqueur or alchermes (optional)
  • Amarene cherries in syrup for decoration

Preparation

  1. Start by soaking the gelatin sheets in cold water for about 10 minutes.
  2. Take some amarene cherries in syrup and blend them until you obtain a puree. If you prefer a more rustic result, you can also chop them finely.
  3. In a separate bowl, whip the cold cream with the powdered sugar until it is firm and frothy.
  4. Heat a bit of the syrup from the amarene cherries (about 50 ml) and dissolve the well-squeezed gelatin, stirring until completely dissolved. If using powdered gelatin, follow the instructions on the package for correct use.
  5. Combine the dissolved gelatin with the amarena puree and mix well. Add the chosen liqueur for an extra touch of flavor.
  6. Gently fold the amarena puree into the whipped cream, being careful not to deflate the mixture.
  7. Pour the mousse into small glasses or a large bowl and let it cool in the refrigerator for at least 4 hours, but preferably overnight for optimal consistency.
  8. When serving, decorate with amarene cherries in syrup and, if desired, with a bit of their syrup or a dusting of powdered sugar.
