Apple and Raisin Fritters

Ingredients

  • 2 large apples
  • 100 g raisins
  • 200 g flour
  • 2 eggs
  • 100 ml milk
  • 50 g sugar

Preparation

  1. Start by soaking the raisins in warm water for about 20 minutes to hydrate and soften them.
  2. Meanwhile, peel the apples, remove the core, and cut them into small cubes.
  3. In a bowl, sift the flour and mix with the sugar, baking powder, pinch of salt, and if desired, the grated lemon zest and cinnamon for extra aroma.
  4. Beat the eggs and add them to the flour mixture. Gradually incorporate the milk as well, stirring to obtain a smooth, lump-free batter.
  5. Drain the raisins and add them to the batter along with the apple cubes.
  6. Heat the oil in a deep pan or fryer. The oil is ready when bubbles form around the handle of a wooden spoon inserted into it.
  7. Scoop portions of batter with a spoon and gently drop them into the hot oil, frying until the fritters are golden and puffed, turning once for even cooking.
  8. Once cooked, drain the fritters on paper towels to remove excess oil.
  9. Dust the still-warm fritters with powdered sugar before serving.
