Apple Muffins

Apple muffins are a delicious sweet variant to enjoy for breakfast or as a snack. I present you with a classic version with an Italian touch.

Ingredients

  • 2 medium apples, peeled and cut into cubes
  • 250 g of 00 flour
  • 150 g granulated sugar
  • 100 ml milk
  • 80 ml vegetable oil or melted butter
  • 2 eggs
  • 1 packet baking powder
  • 1 teaspoon ground cinnamon
  • 1 pinch of salt
  • Powdered sugar (optional, for decoration)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the individual compartments with paper liners.
  2. In a large bowl, mix the flour with the baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
  4. Add the oil (or melted butter) and milk to the egg and sugar mixture, stirring well to combine the ingredients.
  5. Gradually incorporate the dry ingredients mix (flour, baking powder, cinnamon, salt), sifting them and mixing gently to avoid lumps.
  6. Add the cubed apples to the batter and mix gently to distribute them evenly.
  7. Fill the paper liners up to ¾ of their height with the batter.
  8. Bake the muffins for about 20-25 minutes or until golden and a toothpick inserted in the center comes out clean.
  9. Remove the muffins from the oven and let them cool on a wire rack before serving. If desired, you can dust them with powdered sugar before serving.

Trivia

Apple muffins are extremely versatile. By adding a pinch of nutmeg or a handful of chopped walnuts, you can enrich their flavor and texture. For an even more Italian touch, try adding crumbled amaretti to the batter; it will give the muffins a surprising aroma!
