Apricot Muffins
17/11/2023Apricot muffins are a delicious choice for a sweet breakfast or an afternoon snack. Here is the recipe to prepare them:
Ingredients
- 250 g of 00 flour
- 150 g of sugar
- 100 g of melted butter
- 2 large eggs
- 120 ml of milk
- 1 packet of baking powder
- 1 pinch of salt
- Grated zest of 1 lemon
- 200 g of fresh apricots (or dried apricots, if not in season)
If you don’t have fresh apricots, you can also use dried apricots, softening them in warm water or apple juice for about an hour before incorporating them into the batter.
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining the compartments with paper liners.
- In a large bowl, mix together the flour, sugar, baking powder, and pinch of salt.
- In another bowl, beat the eggs and add the melted butter, milk, and grated lemon zest.
- Cut the fresh apricots into small pieces, making sure to remove the pit.
- Combine the wet ingredients with the dry ones, mixing everything with a spatula until you get a homogeneous mixture, but avoiding overworking it.
- Gently add the apricot pieces to the batter.
- Fill the paper liners up to two-thirds of their height.
- Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Once baked, let the muffins cool on the countertop before serving them.
