Arancini with Pumpkin Cream and Amaretti

Ingredients
- 300 g of risotto rice (such as Carnaroli or Arborio)
- 800 ml of vegetable broth
- 200 g of pumpkin, already cleaned
- 1 small onion
- 50 g of butter
- 100 g of amaretti
- 100 g of grated Parmesan
- A few sage leaves
- 2 eggs
- Breadcrumbs as needed
- Oil for frying
- Salt and pepper as needed
Preparation
- Start by preparing the pumpkin cream: cut the pumpkin into cubes and finely chop the onion. In a pan, sauté half of the chopped onion with a bit of butter, add the pumpkin cubes, the sage leaves, season with salt and pepper. Cook with a little vegetable broth until the pumpkin becomes soft and you can easily mash it with a fork.
- Blend the cooked pumpkin to obtain a smooth and homogeneous cream. Add the crumbled amaretti and mix until you have a homogeneous mixture. Let it cool.
- Now prepare the risotto: in a saucepan, sauté the other half of the chopped onion with the remaining butter. Add the rice and toast it for a couple of minutes. Start adding the hot vegetable broth, one ladle at a time, waiting for the rice to absorb the liquid before adding more, until fully cooked.
- Remove the rice from the heat and incorporate the grated Parmesan. Spread the risotto on a baking sheet, flatten it, and let it cool.
- When the risotto is cold, you can start forming the arancini. Take a portion of rice, form a dome in your hand, and insert some pumpkin and amaretti cream in the center. Close with more rice, shaping the arancini into the classic round or oval form.
- Dip the arancini first in the beaten egg and then in the breadcrumbs, making sure each arancino is completely coated.
- Fry the arancini in plenty of hot oil until golden and crispy.
- Drain them on paper towels to remove excess oil and serve hot.
