Baked Frittata Roll

The baked frittata roll is a versatile and pleasant preparation, which allows you to stuff the frittata with the ingredients you prefer most. Here is a classic version:

Ingredients

  • 6 eggs
  • 100g grated cheese (such as Parmesan or Pecorino)
  • 2 tablespoons of milk
  • Salt, to taste
  • Pepper, to taste
  • Aromatic herbs to taste (e.g. chopped parsley)
  • 150-200g of filling of your choice (e.g. cooked ham, sliced cheese, cooked and squeezed spinach, sautéed mushrooms)

Preparation

  1. Start by preheating the oven to 180 °C.
  2. Break the eggs into a large bowl and beat them well with a whisk or a fork.
  3. Add the milk, grated cheese, aromatic herbs, salt and pepper. Mix all the ingredients well.
  4. Pour the mixture into a baking pan lined with parchment paper, spreading it evenly.
  5. Bake in the oven for about 10-15 minutes or until the frittata has set and has a golden appearance.
  6. Once cooked, remove the frittata from the oven and let it cool slightly.
  7. Fill with the chosen filling. Distribute the filling evenly over the frittata.
  8. Using the parchment paper, roll the frittata onto itself forming a roll.
  9. You can serve the frittata roll as is or put it back in the oven for a few minutes to further brown the surface.

The baked frittata roll can be adapted to many variations: for example, you can use asparagus or bresaola if you want an alternative filling. It is also an excellent way to use leftovers.

Fun Fact

If you have any roll left over, you can store it in the refrigerator and enjoy it cold the next day. Some even prefer it cold, because the flavors have time to blend better.
