Baked Fritters

Oven-baked fritters are a lighter alternative to the fried version, while still maintaining a delicious taste. Perfect for those looking for something sweet and less caloric. Here is the recipe.

Ingredients

  • 250 g of 00 flour
  • 50 g of sugar
  • 1 egg
  • 125 ml of lukewarm milk
  • 25 g of melted butter
  • 8 g of fresh brewer’s yeast (or 2 g of dry brewer’s yeast)
  • 1 pinch of salt
  • Grated zest of 1 lemon
  • Raisins (optional)
  • Powdered sugar for decoration

Preparation

  1. Preheat the oven to 180 °C.

  2. If you want to use raisins, soak them in lukewarm water for about 15-20 minutes, then drain and pat dry with paper towels.

  3. Dissolve the brewer’s yeast in the lukewarm milk. If using dry yeast, follow the package instructions for activation.

  4. In a large bowl, mix the flour with the sugar and a pinch of salt.

  5. Add the egg and start combining.

  6. Incorporate the milk with the yeast and continue mixing until you obtain a homogeneous mixture.

  7. Add the melted butter and the grated lemon zest. If you have decided to use raisins, add them now.

  8. Cover the dough with a kitchen cloth and let it rise in a warm place for about 1-2 hours, or until it has doubled in volume.

  9. Line a baking tray with parchment paper and, using two spoons, form small quenelles of dough, placing them on the tray leaving a little space between each.

  10. Bake in the oven for about 15-20 minutes, until the fritters are golden.

  11. Remove the fritters from the oven and let them cool slightly, then dust with powdered sugar before serving.
