Baked Sardine Tortino

Ingredients

  • 500 g fresh sardines
  • 100 g breadcrumbs
  • 80 g grated Parmesan
  • 2 garlic cloves
  • Fresh parsley to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste

Preparation

  1. Clean the sardines by removing the head, entrails, and central spine, then rinse and dry them with paper towels. Set aside.
  2. In a bowl, mix the breadcrumbs with the grated Parmesan, one finely chopped garlic clove, and the chopped fresh parsley. Season with salt and pepper to taste.
  3. Take a baking dish and grease the bottom with a drizzle of extra virgin olive oil.
  4. Arrange a layer of sardines on the bottom, then sprinkle part of the breadcrumb and Parmesan mixture on top, creating a coating.
  5. Continue layering sardines and coating until you run out of ingredients, ending with a layer of coating.
  6. Drizzle the surface with a little extra virgin olive oil.
  7. Preheat the oven to 180 °C and bake the sardine tortino for about 20-30 minutes, or until golden and crispy on the surface.
