Baked Sardine Tortino

Ingredients
- 500 g fresh sardines
- 100 g breadcrumbs
- 80 g grated Parmesan
- 2 garlic cloves
- Fresh parsley to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
Preparation
- Clean the sardines by removing the head, entrails, and central spine, then rinse and dry them with paper towels. Set aside.
- In a bowl, mix the breadcrumbs with the grated Parmesan, one finely chopped garlic clove, and the chopped fresh parsley. Season with salt and pepper to taste.
- Take a baking dish and grease the bottom with a drizzle of extra virgin olive oil.
- Arrange a layer of sardines on the bottom, then sprinkle part of the breadcrumb and Parmesan mixture on top, creating a coating.
- Continue layering sardines and coating until you run out of ingredients, ending with a layer of coating.
- Drizzle the surface with a little extra virgin olive oil.
- Preheat the oven to 180 °C and bake the sardine tortino for about 20-30 minutes, or until golden and crispy on the surface.
