Baked Scampi

Baked scampi are a delicious and simple dish that enhances the flavor of the sea. Here’s how to prepare them:

Ingredients

  • 12 fresh scampi
  • Juice of 1 lemon
  • 3 garlic cloves
  • Fresh chopped parsley
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Breadcrumbs (optional)

Preparation

  1. Preheat the oven to 200 °C.

  2. Clean the scampi by removing the head and shell, but leaving the tail end. Remove the intestinal vein.

  3. Cut the scampi in half lengthwise and arrange them on a baking tray with the flesh facing up.

  4. In a bowl, mix the extra virgin olive oil, lemon juice, chopped garlic, and parsley. Season the mixture with salt and pepper to taste.

  5. Brush or pour the mixture over the prepared scampi halves, making sure to cover them well.

  6. (Optional) Sprinkle a light layer of breadcrumbs on the scampi to add crunch.

  7. Bake the scampi for about 10-15 minutes or until they turn pink and slightly golden.

  8. Serve the scampi hot, drizzled with more lemon juice and garnished with fresh parsley to taste.
