Bicolor Cookies

Ingredients

  • 300 g of 00 flour
  • 150 g of butter at room temperature
  • 150 g of sugar
  • 1 large egg
  • 1 egg yolk
  • 1/2 packet of baking powder
  • A pinch of salt
  • 1 tablespoon of vanilla extract or vanillin
  • 30 g of unsweetened cocoa powder

Preparation

  1. Start by creaming the softened butter with the sugar in a large bowl until the mixture is smooth and fluffy.
  2. Add the whole egg and the yolk, and continue mixing until fully incorporated into the butter and sugar cream.
  3. Add the vanilla extract, followed by the flour, baking powder, and pinch of salt. Work the dough until it becomes smooth and compact.
  4. Divide the dough in half into two equal portions. Into one half, incorporate the tablespoon of cocoa powder, kneading until a uniform color is achieved.

At this point, you have two doughs: one vanilla-flavored and the other cocoa-flavored.

  1. Wrap each dough in plastic wrap and let rest in the refrigerator for about 30 minutes; this will make them easier to handle later.
  2. Take a piece of the white dough and one of the cocoa dough and form two long, thin cylinders. Place them side by side and gently wrap them together to create the characteristic bicolor effect.
  3. Cut the roll into slices about half a centimeter thick to form the cookies.
  4. Arrange the cookies on a baking sheet lined with parchment paper, keeping at least a couple of centimeters between them.
  5. Bake in a preheated oven at 180 °C for about 10-15 minutes or until the edges start to turn golden.
  6. Remove from the oven and let the cookies cool completely on a wire rack before serving.
