Bicolor Log
17/11/2023The bicolor log is an elegant and delicious dessert that can make a splendid impression on the table on any occasion. Here is the recipe to prepare a bicolor log:
Ingredients
- 4 eggs
- 120 g sugar
- 100 g 00 flour
- 20 g unsweetened cocoa powder
- A pinch of salt
- 250 ml whipping cream
- 100 g dark chocolate
- Powdered sugar (for dusting)
- Rum or vanilla flavoring (optional, for flavoring)
Preparation
- First of all, preheat the oven to 180 °C.
- Take the eggs and separate the yolks from the whites. Whip the egg whites to stiff peaks with a pinch of salt.
- In another bowl, beat the yolks with the sugar until you get a light and frothy mixture.
- Add the sifted flour to the yolks, mixing gently so as not to deflate the mixture.
- Incorporate one third of the stiff egg whites into the yolk, flour, and sugar mixture, stirring slowly from the bottom up. Add the rest of the egg whites using the same method to avoid deflating the batter.
- Take some of this batter and mix it with the sifted cocoa to obtain a uniform color without lumps.
- Line a baking tray with parchment paper and pour the white batter, leveling it well.
- Add the cocoa batter forming stripes or designs as desired, to create the two-tone effect.
- Bake in the oven for about 10-12 minutes.
- Meanwhile, melt the chocolate in a double boiler or in the microwave and whip the cream, adding a bit of powdered sugar if you like it sweet.
- When the batter is cooked, remove from the oven and invert it onto another sheet of parchment paper. Remove the parchment paper used for baking and roll the biscuit onto itself using the new paper. Let cool.
- When cold, gently unroll and spread a layer of whipped cream mixed with the melted chocolate. If desired, you can flavor the cream with rum or vanilla.
- Roll the biscuit again with the filling inside, wrap it in plastic wrap and let it rest in the fridge for at least an hour.
- Once rested, dust with powdered sugar before serving.
Trivia
The bicolor log is a variant of the classic Christmas log, but can be customized with different types of fillings and decorations. The play of colors makes it particularly attractive and you can decorate it with dollops of cream, chocolate shavings or even small sugar or marzipan decorations to make each slice unique and inviting.
