Ingredients
- 200 g fresh blackberries (or frozen if not in season)
- 200 g 00 flour
- 150 g granulated sugar
- 100 g softened butter
- 3 eggs
- 1 packet baking powder
- Grated zest of 1 lemon
- A pinch of salt
- Powdered sugar (for decoration)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
- Add the softened butter and continue beating.
- Incorporate the sifted flour with the baking powder, salt, and grated lemon zest, mixing gently to avoid deflating the mixture.
- Add the blackberries, setting some aside for decoration. Stir gently to distribute them evenly.
- Pour the mixture into a buttered and floured pan (or lined with parchment paper) and bake for about 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool before removing it from the pan and decorate it with the reserved blackberries and a dusting of powdered sugar.
