Broccoli and Salmon Meatballs

Ingredients
- 300 g fresh salmon
- 300 g broccoli
- 1 egg
- 50 g breadcrumbs
- 30 g grated Parmesan
- 1 garlic clove
- Chopped parsley to taste
- Salt to taste
- Pepper to taste
- Extra virgin olive oil to taste

Start by cleaning the broccoli: divide the broccoli into florets and boil them in lightly salted water until tender but still al dente. After cooking, drain them well and let them cool.

Meanwhile, cook the salmon. You can steam it, bake it, or pan-fry it with a drizzle of extra virgin olive oil, making sure it stays moist and not too dry.

Once cooked, let the salmon cool, then flake it with your hands or a fork until reduced to small pieces.

In a large bowl, combine the broccoli, flaked salmon, Parmesan, one egg, breadcrumbs, finely chopped garlic (if desired), parsley, salt, and pepper to taste.

Mix all ingredients well until you obtain a homogeneous mixture, then form meatballs of the desired size by rolling them between your hands.
