Burrata and Shrimp Pasta

Burrata and shrimp pasta is an elegant and flavorful dish, perfect for special occasions or when you want to change up your routine with a slightly more sophisticated first course. Here’s the recipe:

Ingredients

  • 320 g of pasta (for example, linguine or spaghetti)
  • 200 g of fresh or frozen and already cleaned shrimp
  • 1 burrata (about 200 g)
  • 1 clove of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt to taste
  • Chili pepper (optional)
  • Lemon juice

Preparation

  1. Bring a pot of salted water to a boil for the pasta. Add the pasta and cook it al dente according to the package instructions.

  2. Meanwhile, in a large skillet, heat a drizzle of extra virgin olive oil with a crushed clove of garlic (which you will remove before adding the shrimp if you prefer a less intense flavor).

  3. Add the peeled and cleaned shrimp to the skillet. If you like, you can add a bit of chili pepper for a spicy touch.

  4. Sauté the shrimp until they turn pink and slightly golden, then adding a pinch of salt and a few drops of fresh lemon juice.

  5. Drain the al dente pasta and add it to the skillet with the shrimp, reserving a bit of cooking water. Mix well to allow the pasta to absorb the flavor of the shrimp.

  6. Turn off the heat and add the burrata cut into pieces, mixing gently to let it melt slightly with the heat of the pasta.

  7. Plate the pasta and sprinkle with fresh chopped parsley for a touch of color and freshness.

The burrata will melt slightly, creating a cream that will combine with the shrimp sauce, resulting in a creamy and enveloping dish.

Trivia

Burrata is a Puglian cheese highly appreciated for its creaminess. Composed of a mozzarella shell filled with cream and mozzarella pieces (‘stracciatella’), it is perfect to pair with delicate-flavored ingredients like shrimp.
