Butter-Free Muffins

Butter-free muffins are a light choice and can be equally delicious. Here is a basic recipe to prepare them:

Ingredients

  • 250 g flour (preferably 00 for cakes)
  • 200 ml milk
  • 100 g granulated sugar
  • 80 ml seed oil (as a lighter alternative to butter)
  • 2 eggs
  • 1 packet baking powder
  • 1 pinch of salt
  • Flavoring of choice (vanilla, grated lemon zest, etc.)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the eggs with the sugar until you obtain a frothy mixture.
  3. Add the oil in a thin stream, continuing to mix.
  4. Pour in the milk and incorporate the chosen flavoring.
  5. Separately, combine the flour, baking powder, and pinch of salt, sifting them to avoid lumps.
  6. Incorporate the dry ingredients into the liquid mixture, mixing with a spatula using bottom-to-top movements to avoid deflating the batter.
  7. Pour the mixture into the muffin tins, filling them about 3/4 full.
  8. Bake the muffins for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove the muffins from the oven and let them cool on a wire rack before serving.

Trivia

Muffins have Anglo-Saxon origins and are known for their versatility. Without butter, you get a slightly different texture but still very pleasant. You can further customize your muffins by adding fruit to the recipe, such as blueberries or apple pieces, or chocolate chips for a more indulgent variant.
