Cabbage Salad

Cabbage salad is a simple and fresh dish, perfect as a side during meals. Here is the recipe to make a delicious Italian-style cabbage salad.

Ingredients

  • 1/2 cabbage
  • 2 carrots
  • 1 apple (optional for a touch of sweetness)
  • Juice of 1 lemon
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A bunch of fresh parsley (optional)
  • Vinegar (white wine or apple)

Preparation

  1. Start by cleaning the cabbage: remove the outer leaves, cut away the tough bottom part and remove the central core. Then, thinly slice the cabbage to obtain thin strips.
  2. Peel the carrots and grate them using a grater with large holes.
  3. (Optional) If you wish to add a touch of sweetness, peel an apple and cut it into cubes or thin strips.
  4. In a large bowl, combine the sliced cabbage, grated carrots and, if you have decided to use it, the apple. Mix the ingredients well.
  5. In a separate bowl, emulsify the lemon juice with a little extra virgin olive oil, salt and pepper to your taste, until you obtain a homogeneous vinaigrette. If you like, you can also add a little vinegar.
  6. Pour the dressing over the salad and mix well so that all the ingredients are well coated.
  7. Let the salad rest in the refrigerator for about 30 minutes before serving, so that the flavors can blend well.
  8. Before serving, add the chopped fresh parsley to give an extra touch of freshness and aroma.

This side dish is ideal to pair with meat or fish dishes, but it is also great to enjoy on its own as a light and nutritious meal.
