Cappuccino Muffins

Ingredients

  • 250 g flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • 100 g sugar
  • 1 large egg
  • 240 ml milk
  • 60 ml vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons cocoa powder
  • 1 or 2 teaspoons instant coffee (adjust according to desired intensity)
  • 100 g dark chocolate, chopped (optional for adding chocolate chunks)

For the cappuccino frosting (optional):

  • 100 g cream cheese (such as Philadelphia)
  • 50 g powdered sugar
  • 1 teaspoon instant coffee dissolved in 1 tablespoon hot water

Preparation

  1. Preheat the oven to 175 °C and line a muffin tin with paper liners.
  2. In a bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, sugar, and cocoa powder.
  3. In another bowl, whisk the egg with the milk, oil, vanilla extract, and instant coffee until you have a homogeneous mixture.
  4. Combine the wet ingredients with the dry ingredients and mix until you have a smooth batter. If desired, add the chopped dark chocolate.
  5. Divide the batter among the liners, filling them about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool before removing them from the tin.

For the cappuccino frosting:

  1. Mix the cream cheese with the powdered sugar and the dissolved instant coffee until smooth and homogeneous.
  2. Spread the frosting on the cooled muffins.
