Cappuccino Plumcake

The cappuccino plumcake is a delicious variation on the traditional plumcake, combining the bold flavor of coffee with the sweet taste of cream.

Ingredients

  • 200 g 00 flour
  • 200 g brown sugar
  • 100 g softened butter
  • 3 medium eggs
  • 100 ml cold espresso coffee
  • 1 packet baking powder
  • 100 ml whole milk
  • Cocoa powder for decoration
  • Salt, a pinch

Preparation

  1. Prepare the espresso coffee and let it cool.
  2. Meanwhile, beat the eggs with the brown sugar until you get a light and frothy mixture.
  3. Add the softened butter and continue beating until perfectly incorporated into the mixture.
  4. Gradually incorporate the flour, previously sifted with the baking powder, alternating with the milk and cold coffee, to avoid lumps.
  5. Add a pinch of salt and mix until you get a homogeneous batter.
  6. Pour the mixture into a plumcake mold previously buttered and floured.
  7. Bake in a preheated oven at 180 °C for about 40 minutes, or until a toothpick inserted in the center of the plumcake comes out dry.
  8. Remove from the oven and let cool completely before dusting with cocoa powder to create the “cappuccino” effect.

Fun Fact

The cappuccino plumcake is perfect for breakfast or as a snack, accompanied of course by a good coffee or a real cappuccino. The addition of coffee in the batter not only gives flavor, but also a characteristic marbled color to the cake.

Enjoy!
