Carrot Muffins

- 200 g peeled carrots
- 100 g sugar
- 100 g chopped almonds
- 2 eggs

Preparation
- Preheat the oven to 180 °C.
- Start by finely chopping the carrots in the food processor.
- Add the chopped almonds, sugar, and grated orange zest to the carrots and mix.
- Separate the egg yolks from the whites. Add the yolks to the carrot mixture and incorporate well.
- In a separate bowl, beat the egg whites with a pinch of salt until you obtain a foamy and stiff mixture.
- Gently fold the beaten egg whites into the carrot mixture.
- Then add the sifted flour and baking powder, mixing carefully so as not to deflate the mixture.
- Pour the mixture into previously buttered and floured muffin tins, filling them about two-thirds full.
- Bake the muffins for 20-25 minutes or until golden and a toothpick inserted in the center comes out clean.
- Let cool and then dust with powdered sugar before serving.
