Cauliflower Gnocchi
17/11/2023Cauliflower gnocchi are an excellent alternative to traditional potato gnocchi, especially if you’re looking for a lighter version or want to incorporate more vegetables into your diet.
Ingredients
- 1 medium cauliflower
- 100 g semolina flour (plus more for working the dough)
- 50 g grated Parmesan
- 1 egg (optional)
- Nutmeg (to taste)
- Salt and pepper (as needed)
Preparation
- Start by washing and cutting the cauliflower into florets. Steam the florets until tender, which should take about 10-15 minutes. Another option is to boil them in salted water until softened.
- Once the cauliflower is cooked, drain it well and let it cool slightly. Then, mash it with a potato ricer or blend it in a food processor until you achieve a fine, uniform consistency.
- Transfer the cauliflower to a large bowl. Add the Parmesan, a grating of nutmeg, salt, pepper, and the egg if you choose to use it (it makes the dough more cohesive). Mix well.
- Gradually incorporate the semolina flour, working the dough until you reach a consistency that allows you to form gnocchi. The dough should be firm enough not to stick excessively to your hands, but soft enough to be workable.
- On a floured surface, take portions of dough and roll them into cylinders about 2 centimeters thick. Cut the cylinders into 2-3 centimeter pieces to form the gnocchi.
- If desired, you can shape the gnocchi in the classic way: press each piece against the tines of a fork or on a ridged gnocchi board, applying light pressure and rolling slightly to create the typical indentation.
- Bring a pot of salted water to a boil. Cook the gnocchi in boiling water and, as soon as they rise to the surface, wait one minute before draining them with a slotted spoon.
- Dress the cauliflower gnocchi with your preferred sauce. They pair well with a simple butter and sage seasoning or with more elaborate tomato or cheese-based sauces.
