Checkered Tiramisu

Ingredients
- 500g mascarpone
- 4 very fresh eggs (with yolks and whites separated)
- 100g sugar
- 300g ladyfingers
- Espresso coffee as needed
- Unsweetened cocoa powder as needed
- 1 pinch of salt
Preparation

Start by preparing a strong espresso and let it cool.

Meanwhile, separate the egg yolks from the whites. Using an electric or hand whisk, beat the yolks with the sugar until you obtain a light and frothy mixture.

Add the mascarpone to the beaten yolks and mix gently until you obtain a homogeneous mixture.

In another bowl, beat the egg whites to stiff peaks with a pinch of salt. Fold them gently into the mascarpone mixture with delicate movements so as not to deflate them, thus obtaining the tiramisu cream.

Now that you have the cream ready, you can proceed to assemble the Checkered Tiramisu. To do this, quickly dip the ladyfingers in the cold coffee and begin arranging them in a baking dish, alternating the orientation of each cookie to create the checkered effect. For example, if the first ladyfinger is placed vertically, the second will be horizontal.

After creating the first layer of ladyfingers, spread a portion of the mascarpone cream on top, leveling it well.

Repeat the process to form a second layer of ladyfingers dipped in coffee and arranged alternately to the first layer to maintain the checkered effect.

Cover with the remaining mascarpone cream and level it.

Place the Checkered Tiramisu in the refrigerator for at least 3-4 hours before serving. Before serving, use a sieve to dust the surface with unsweetened cocoa powder.
