Cherry Cake
17/11/2023The cherry cake is a delicious dessert, perfect when these juicy red gems are in season. Here is an Italian version of this delicious cake.
Ingredients
- 500 g fresh cherries, pitted
- 200 g 00 flour
- 150 g granulated sugar
- 100 g melted butter
- 3 eggs
- 1 packet baking powder
- 1 pinch of salt
- Powdered sugar (for decoration)
Preparation
- Start by preheating the oven to 180 °C and prepare a cake pan by buttering and flouring it or lining it with parchment paper.
- In a bowl, beat the eggs with the sugar until you obtain a light and fluffy mixture.
- Incorporate the cooled melted butter, mixing well.
- Sift the flour with the baking powder and the pinch of salt, then add these dry ingredients to the egg and sugar mixture, stirring gently until you obtain a homogeneous batter.
- Arrange half of the pitted cherries on the bottom of the pan and pour the cake batter over them.
- Place the remaining cherries on top of the batter, pressing them in slightly to distribute them evenly.
- Bake the cake for about 35-40 minutes or until golden and a toothpick inserted in the center comes out clean.
- Let the cherry cake cool on a wire rack before dusting it with powdered sugar for decoration.
