Cherry Tiramisu
17/11/2023Cherry tiramisu is a delicious variation of the classic tiramisu, marrying the sweetness and acidity of cherries with the creaminess of mascarpone. Here is the recipe with an Italian touch:
Ingredients
- 500g fresh cherries
- 250g mascarpone
- 3 eggs (with whites and yolks separated)
- 80g granulated sugar
- 1 package of ladyfingers
- 1 small glass of Maraschino or Amaretto di Saronno (optional)
- A few drops of lemon juice
- Bitter cocoa powder for dusting
Preparation

Wash and pit the cherries. Set some aside for the final decoration and cut the rest in half or quarters, then let them macerate in the Maraschino or Amaretto with a few drops of lemon juice.

Separate the yolks from the whites. In a bowl, beat the yolks with the sugar until you obtain a frothy, pale mixture.

Fold the mascarpone into the beaten yolks and mix gently until you have a smooth cream.

In another bowl, whip the egg whites to stiff peaks and gently fold them into the mascarpone cream using a spatula and bottom-to-top movements to avoid deflating them.

Take a baking dish and arrange a layer of ladyfingers lightly soaked in the cherry maceration liquid. Do not soak them too much to prevent breaking.

Spread some of the mascarpone cream and a layer of cherries on top. Repeat the process until all ingredients are used, finishing with a layer of cream.

Cover with plastic wrap and let rest in the refrigerator for at least 4 hours, but if possible, prepare it the evening before for the next day.

Before serving, decorate with the whole cherries set aside and dust with bitter cocoa powder.
