Chestnut Gnocchi

Ingredients

  • 300 g chestnut flour
  • 200 g potatoes
  • 70 g 00 flour
  • 1 egg
  • Salt to taste
  • Nutmeg to taste

  • Butter and sage for dressing

Preparation

  1. Start by boiling the potatoes with their skins in salted water until soft, then drain, peel, and mash them with a potato ricer.

  2. Add the chestnut flour and 00 flour to the mashed potatoes and mix well.

  3. Form a well with the flours and potatoes and add an egg, a pinch of salt, and a grating of nutmeg in the center.

  4. Knead everything until you obtain a homogeneous dough that doesn’t stick to your hands; add a little more 00 flour if necessary.

  5. Once you have the dough, take small portions and roll them on a work surface to form cylinders. Then cut the cylinders into segments about 2 cm long to make the gnocchi.

  6. Cook the gnocchi in a pot with plenty of salted water and wait until they rise to the surface, a sign that they are cooked.

  7. Meanwhile, if desired, melt some butter in a pan and add sage leaves to flavor it.

  8. Drain the gnocchi and, if you like, toss them in the pan with the butter and sage to enhance their flavor.

  9. Serve hot with a sprinkle of grated Parmesan, if desired.
