Chicken and Avocado Soup

Chicken and avocado soup is a comforting and flavorful dish. Here is the recipe with an Italian touch:

Ingredients

  • 300 g chicken breast
  • 1 ripe avocado
  • 1 white onion
  • 2 garlic cloves
  • 1 liter chicken broth
  • 200 g cherry tomatoes
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Juice of 1 lime
  • 1 bunch fresh cilantro (alternatively parsley, for a more Italian touch)
  • 1 small red chili pepper (optional)

Preparation

  1. Start by finely slicing the onion and sautéing it in a pot with a drizzle of extra virgin olive oil until it becomes translucent.
  2. Add the chopped garlic cloves and, if you like, the red chili pepper sliced into rounds, being careful to remove the seeds if you want a less spicy flavor.
  3. Cut the chicken breast into bite-sized pieces and add it to the pot. Brown it until lightly golden on all sides.
  4. Pour the chicken broth into the pot, bring to a boil, then reduce the heat and let simmer for 20 minutes.
  5. Meanwhile, dice the avocado and drizzle it with lime juice to prevent it from browning.
  6. After 20 minutes, add the cherry tomatoes cut in half and cook for another 5 minutes.
  7. Adjust salt and pepper to your liking.
  8. Serve the soup hot, adding the diced avocado and chopped fresh cilantro (or parsley) as a final touch.

Fun Fact

Chicken and avocado soup is a very popular dish in Mexico, where it is called “Sopa de Lima”. The use of fresh lime and cilantro gives it a typical Latin American taste. For a more Italian interpretation, you could replace the cilantro with parsley and add grated Parmesan when serving.
