Chicken Breast with Marsala and Mushrooms

Ingredients

  • 4 chicken breasts
  • 250 grams of mushrooms (button, porcini or mixed)
  • 1 glass of Marsala wine
  • Flour, as needed to coat the chicken
  • 2 garlic cloves
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh chopped parsley (optional)
  • Chicken or vegetable broth, if needed
  • 30 grams of butter (optional)

Preparation

  1. Start by cleaning the mushrooms with a damp cloth and slice them not too thinly.

  2. Lightly coat the chicken breasts with flour on both sides.

  3. Heat the oil in a pan over medium heat and add the chicken breasts. Cook them until golden on both sides, then remove from the pan and set aside.

  4. In the same pan, add a drizzle of oil if necessary and sauté the garlic cloves until golden, then remove them.

  5. Add the mushrooms to the pan and let them cook until golden and they have released their moisture.

  6. Return the chicken to the pan with the mushrooms and add the Marsala. Increase the heat to evaporate the alcohol.

  7. Lower the heat, adjust salt and pepper, cover the pan, and cook for about 10 minutes. If the sauce reduces too much, add a little broth.

  8. Once the chicken is cooked and the sauce has reached the desired consistency, you can enrich the dish by adding butter in pieces to give creaminess.

  9. Sprinkle with chopped parsley before serving, if desired.
