Chicken Breast with Mushrooms
17/11/2023Here is a recipe to prepare a delicious chicken breast with mushrooms, with an Italian touch. This dish combines the simplicity of home cooking with the rich flavor of mushrooms and aromatic herbs.
Ingredients
- 2 chicken breasts
- 300 g of button mushrooms or mixed
- 2 garlic cloves
- 1 sprig of rosemary (or 1 teaspoon of dried rosemary)
- 1/2 glass of white wine
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
- Optional: a few tablespoons of fresh cream if you want a creamier sauce
Preparation
- Clean the mushrooms by removing any earthy residues and slice them. If using already cleaned mushrooms, you can simply cut them into slices.
- Cut the chicken breasts so they have a uniform thickness. You can also cut them into strips if you prefer.
- In a large skillet, heat the extra virgin olive oil and add the crushed garlic cloves and rosemary. Let it flavor for a minute.
- Add the chicken breasts to the skillet and cook over medium-high heat until golden on both sides. Season with salt and pepper to taste.
- Remove the chicken from the skillet and set aside to keep warm.
- In the same skillet, add the mushrooms and let them cook until tender and golden. During cooking, add salt and pepper.
- Deglaze with white wine and let the alcohol evaporate over high heat.
- If you want a creamier sauce, now you can add the cream.
- Return the chicken to the skillet with the mushrooms and let them flavor together for a few minutes, until the chicken is well cooked and the flavors have melded.
- Serve hot, garnished with fresh chopped parsley.
