Chicken in Green Sauce

Here is a recipe to prepare chicken in green sauce, with an Italian touch in the way of preparing the green sauce.

Ingredients

  • 4 chicken thighs (or breasts, according to preference)
  • 2 garlic cloves
  • ½ glass of white wine
  • Extra virgin olive oil
  • Salt
  • Pepper

For the green sauce:

  • 1 bunch of parsley
  • 1 garlic clove
  • 4 anchovy fillets in oil
  • 1 teaspoon of capers
  • 1 tablespoon of mustard
  • Juice of ½ lemon
  • Extra virgin olive oil
  • Salt
  • Pepper

Preparation

  1. Start by preparing the green sauce. Clean the parsley, wash and dry it. Then, in a food processor, add the parsley, one garlic clove, the anchovy fillets, capers, mustard and lemon juice. Turn on the processor and slowly incorporate the olive oil until you obtain a smooth sauce. Season with salt and pepper to taste.

  2. Clean the chicken thighs, wash and dry them with paper towels. In a large skillet, sauté the garlic cloves in extra virgin olive oil. When the garlic starts to turn golden, remove it and place the chicken thighs in the pan.

  3. Brown the chicken on all sides over medium-high heat until it is nicely golden. At this point, season with salt and pepper to taste.

  4. Deglaze with the white wine and let the alcohol evaporate. Then lower the heat, cover with a lid and cook for about 30 minutes, turning the chicken occasionally.

  5. Once the chicken is cooked and the skin is crispy, remove the lid and let the cooking juices reduce if necessary.

  6. Serve the chicken hot and accompany it with the green sauce, which you can pour over the chicken or serve separately in a sauce boat.
