Chicken Meatloaf
17/11/2023Here is a recipe for an Italian-style chicken meatloaf:
Ingredients
- 500 g ground chicken breast
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 egg
- 50 g breadcrumbs
- 50 g grated Parmesan
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Extra virgin olive oil
- 100 g cooked ham, cubed (optional)
- 100 g mozzarella, cubed (optional)
Preparation
- Prepare all the ingredients as indicated in the list above.
- In a large bowl, combine the ground chicken with the onion, garlic, egg, breadcrumbs, Parmesan, parsley, salt, and pepper. Mix well to combine the ingredients.
- If you decide to use the cooked ham and mozzarella, add these two ingredients to the mixture and stir until evenly distributed.
- Prepare a baking tray lined with parchment paper and brush with a little oil.
- Transfer the mixture to the tray and shape it into a meatloaf, making sure it is compact.
- Bake in a preheated oven at 180 °C for about 40-50 minutes or until the surface of the meatloaf is golden and the chicken is cooked through inside.
- Once ready, let the meatloaf rest for a few minutes before slicing it.
Interesting Facts
The meatloaf is a very versatile dish and lends itself to numerous variations. For example, you can enrich it with finely chopped vegetables, such as spinach or carrots, for an extra touch of color and flavor. Additionally, in some Italian versions the meatloaf is cooked wrapped in a pancetta net, which gives it a more intense flavor and a crispy crust.
