Chicken rolls

I will present you with an Italian twist on the classic chicken rolls, or ā€œChicken rollsā€. Here’s how you could prepare them, including an Italian note with the addition of prosciutto and mozzarella:

Ingredients

  • 4 chicken breasts, flattened
  • 4 slices of prosciutto
  • 100 g mozzarella, sliced or in pieces
  • 8 fresh sage leaves
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 clove of garlic
  • 100 ml white wine
  • Wooden toothpicks or kitchen twine

Preparation

  1. Preheat the oven to 180 °C.
  2. Lay the flattened chicken breasts on a cutting board and season them with salt and pepper.
  3. On each chicken breast, place a slice of prosciutto, a few slices of mozzarella, and two sage leaves.
  4. Roll each chicken breast with the filling inside to form rolls. Secure each roll with toothpicks or kitchen twine to maintain its shape during cooking.
  5. Heat a little extra virgin olive oil in a large skillet and sear the rolls together with a clove of garlic until golden on all sides.
  6. Deglaze with white wine and let it evaporate.
  7. Transfer the rolls to a baking dish and bake for about 20 minutes, or until the chicken is cooked through.
  8. Remove the toothpicks or twine, slice if desired, and serve the rolls with a side of your choice.

Trivia

In Italy, chicken rolls can include many regional variations with ingredients such as cooked ham or radicchio, or a touch of blue cheese for a bolder flavor. Serving them with a side of seasonal vegetables or a portion of pasta with butter and sage will make your meal a perfect example of balance between Italian home cooking and an international touch.
