Chicken Skewers

Ingredients

  • 500 g chicken breast
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large onion
  • 2 zucchinis
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Aromatic herbs (rosemary, thyme, oregano) fresh or dried

Marinade (optional):

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Preparation

  1. Cut the chicken breast into cubes about 2 cm per side.
  2. If you want to use the marinade, mix the oil, lemon juice, minced garlic, salt, and pepper in a bowl. Add the chicken cubes, cover, and let marinate in the refrigerator for at least 30 minutes.
  3. Clean and cut the bell peppers, onion, and zucchinis into pieces that match the size of the chicken cubes.
  4. Take wooden skewers (if wooden, soak them in water for about 20 minutes beforehand to prevent burning during cooking) and thread alternating a piece of vegetable and a marinated chicken cube.
  5. Season the skewers with salt, pepper, and a drizzle of extra virgin olive oil. If desired, sprinkle with your choice of aromatic herbs.
  6. Prepare a hot grill or grill pan. Cook the skewers until the chicken is well golden and fully cooked, turning occasionally for even cooking (about 10-15 minutes depending on the size of the pieces and heat intensity).
  7. Serve the chicken skewers hot.
