Chicken Skewers

Ingredients
- 500 g chicken breast
- 1 red bell pepper
- 1 yellow bell pepper
- 1 large onion
- 2 zucchinis
- Salt and pepper to taste
- Extra virgin olive oil
- Aromatic herbs (rosemary, thyme, oregano) fresh or dried
Marinade (optional):
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Preparation
- Cut the chicken breast into cubes about 2 cm per side.
- If you want to use the marinade, mix the oil, lemon juice, minced garlic, salt, and pepper in a bowl. Add the chicken cubes, cover, and let marinate in the refrigerator for at least 30 minutes.
- Clean and cut the bell peppers, onion, and zucchinis into pieces that match the size of the chicken cubes.
- Take wooden skewers (if wooden, soak them in water for about 20 minutes beforehand to prevent burning during cooking) and thread alternating a piece of vegetable and a marinated chicken cube.
- Season the skewers with salt, pepper, and a drizzle of extra virgin olive oil. If desired, sprinkle with your choice of aromatic herbs.
- Prepare a hot grill or grill pan. Cook the skewers until the chicken is well golden and fully cooked, turning occasionally for even cooking (about 10-15 minutes depending on the size of the pieces and heat intensity).
- Serve the chicken skewers hot.
