Chicken Strips with Carrots and Zucchini

Ingredients

  • 300 g chicken breast
  • 2 medium carrots
  • 2 medium zucchini
  • 1 garlic clove
  • Extra virgin olive oil (to taste)
  • Salt (to taste)
  • Pepper (to taste)
  • White wine (about 100 ml)
  • Fresh parsley (for garnish)
  • (Optional) Fresh rosemary or thyme

Preparation

  1. Wash and trim the carrots and zucchini, then cut them into julienne or thin strips.
  2. Cut the chicken breast into strips, that is, thin slices.
  3. In a large skillet, heat a drizzle of extra virgin olive oil and add a crushed garlic clove to flavor the oil.
  4. Remove the garlic and add the chicken. Brown the chicken over medium-high heat until well sealed and lightly golden.
  5. Add the carrots and zucchini to the skillet with the chicken and stir.
  6. Season with salt and pepper to your taste and, if desired, add some chopped fresh rosemary or thyme.
  7. Deglaze with white wine and let cook for a few minutes until the alcohol has evaporated.
  8. Lower the heat and cover the skillet, cooking for about 10-15 minutes, until the vegetables are tender and the chicken is fully cooked.
  9. Adjust salt and pepper if necessary and garnish with chopped fresh parsley before serving.
