Chicken Strips with Mushrooms

Here is the recipe for chicken strips with mushrooms, with an Italian touch:

Ingredients

  • 400 g chicken breast
  • 300 g mushrooms (button or porcini)
  • 1 clove of garlic
  • Fresh parsley to taste
  • 1/2 glass of white wine
  • Flour to taste for dusting the chicken
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Clean the mushrooms with a damp cloth and slice them. If using fresh porcini, the flavor will be more intense and characteristic.
  2. Cut the chicken breast into strips (straccetti) and lightly flour them.
  3. In a large pan, heat a drizzle of extra virgin olive oil and sauté the garlic, which you can then remove once golden to avoid too intense a flavor.
  4. Add the chicken strips to the pan and let them brown on all sides.
  5. Deglaze with white wine and let the alcohol evaporate over high heat.
  6. Add the mushrooms, seasoning with salt and pepper to taste, and cook everything for about 10 minutes, or until the mushrooms are tender and the chicken is fully cooked.
  7. At the end of cooking, add the fresh chopped parsley for a touch of color and freshness.

Trivia
