Chicken Strips with Radicchio
17/11/2023Chicken strips with radicchio are a tasty and simple dish to prepare. Here is the recipe with a small Italian touch:
Ingredients
- 400 grams of chicken breast
- 1 head of red radicchio
- 2 tablespoons of extra virgin olive oil
- Salt to taste
- Black pepper to taste
- 1/2 glass of white wine
- 1 clove of garlic
- (Optional) Parmesan or grated Parmesan for garnish
- (Optional) A few walnuts to add a crunchy note
Preparation
- Start by cutting the chicken breast into strips, that is, into thin and not too long slices.
- Wash the radicchio and cut it into strips.
- In a pan, heat the extra virgin olive oil with a peeled and crushed clove of garlic.
- When the garlic is golden, remove it and add the chicken strips.
- Brown the chicken until it is golden on all sides.
- Season with salt and pepper to taste.
- Deglaze with the white wine and let the alcohol evaporate.
- Add the cut radicchio to the pan, mixing well to flavor everything.
- Cook for another 5-7 minutes, until the radicchio has slightly wilted and the chicken is well cooked.
- If desired, before removing from the heat, you can add some chopped walnuts for a crunchy touch.
- Serve immediately, optionally sprinkling with Parmesan or grated Parmesan.
Trivia
Radicchio, typical of northern Italian cuisine and in particular of Veneto, brings with it a slightly bitter taste that pleasantly contrasts with the sweetness of the chicken. Pairing it with white wine adds an additional aromatic note that makes this dish even more appetizing. Parmesan or Grana add an extra touch of class to the whole.
