Chicken with Almonds

Preparation

  2. In another skillet, heat a little olive oil and sauté the finely chopped onion, crushed garlic, and grated ginger until they become translucent.
  3. Add the chicken pieces to the skillet and sear until golden on all sides.
  4. Add the carrots cut into sticks and continue cooking for a few minutes.
  5. Deglaze with the white wine and let the alcohol evaporate.
  6. In a separate bowl, mix the chicken broth with the soy sauce and cornstarch, then pour everything into the skillet.
  7. Adjust with salt and pepper, and cook over medium-low heat until the sauce has thickened and the chicken is cooked through.
  8. One minute before turning off the heat, add the toasted almonds and stir well.
  9. Serve hot with a side of steamed rice or, if you want to stay on theme with Italian, with a nice mashed potatoes.
