Chicken with Peppers

Chicken with peppers is a very tasty dish and relatively simple to prepare. As a good Italian, I suggest serving it with some bread to make the “scarpetta” or perhaps with a bit of pasta as an accompaniment, maybe some rigatoni that pair well with the pepper sauce. Here’s the recipe:

Ingredients

  • 4 chicken thighs (or chicken breast cut into bite-sized pieces, if you prefer)
  • 2 red peppers
  • 2 yellow peppers
  • 1 onion
  • 2 garlic cloves
  • Extra virgin olive oil
  • Salt
  • Pepper
  • A sprig of rosemary (optional)
  • A glass of white wine
  • Chicken broth or vegetable stock (if necessary)

Preparation

  1. Start by washing and cleaning the peppers, cutting them into strips or cubes, depending on your preferences.
  2. Peel the onion and garlic and slice them finely.
  3. In a large pan, preferably non-stick, heat a drizzle of oil and place the chicken pieces previously salted and peppered. Brown the chicken on all sides until it has taken on a nice golden color.
  4. Remove the chicken and in the same pan add the onion and garlic. Let it sauté until they become translucent.
  5. Add the peppers, mix well and let them cook for about 5 minutes.
  6. At this point, put the chicken back in the pan with the peppers and add the white wine. Let the alcohol evaporate over high heat.
  7. Add the rosemary, lower the heat, cover with a lid and let cook for about 30 minutes. If the sauce dries out too much, you can add a bit of chicken broth or hot water.
  8. Check the salt and pepper and adjust to your taste.
  9. Serve hot, perhaps with a sprinkle of fresh parsley for decoration.
