Chicken with Peppers
17/11/2023Chicken with peppers is a very tasty dish and relatively simple to prepare. As a good Italian, I suggest serving it with some bread to make the “scarpetta” or perhaps with a bit of pasta as an accompaniment, maybe some rigatoni that pair well with the pepper sauce. Here’s the recipe:
Ingredients
- 4 chicken thighs (or chicken breast cut into bite-sized pieces, if you prefer)
- 2 red peppers
- 2 yellow peppers
- 1 onion
- 2 garlic cloves
- Extra virgin olive oil
- Salt
- Pepper
- A sprig of rosemary (optional)
- A glass of white wine
- Chicken broth or vegetable stock (if necessary)
Preparation
- Start by washing and cleaning the peppers, cutting them into strips or cubes, depending on your preferences.
- Peel the onion and garlic and slice them finely.
- In a large pan, preferably non-stick, heat a drizzle of oil and place the chicken pieces previously salted and peppered. Brown the chicken on all sides until it has taken on a nice golden color.
- Remove the chicken and in the same pan add the onion and garlic. Let it sauté until they become translucent.
- Add the peppers, mix well and let them cook for about 5 minutes.
- At this point, put the chicken back in the pan with the peppers and add the white wine. Let the alcohol evaporate over high heat.
- Add the rosemary, lower the heat, cover with a lid and let cook for about 30 minutes. If the sauce dries out too much, you can add a bit of chicken broth or hot water.
- Check the salt and pepper and adjust to your taste.
- Serve hot, perhaps with a sprinkle of fresh parsley for decoration.
Trivia
In Italian cuisine, chicken with peppers is a classic of home cooking, especially in central-southern Italy where peppers are widely used for their sweet notes and meaty texture. Moreover, peppers are rich in vitamin C and antioxidants, making this dish not only tasty but also healthy.
