Chicken with Tomatoes and Avocado

Ingredients
- 4 skinless, boneless chicken breasts
- 2 ripe avocados, cut into cubes
- 250 g cherry or datterini tomatoes, halved
- 2 garlic cloves, finely chopped
- Juice of 1 lemon
- 1 bunch fresh basil, chopped
- 60 ml extra virgin olive oil
- Salt and pepper to taste
- Red pepper flakes (optional)
Preparation
- Start by heating 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Season both sides of the chicken breasts with salt and pepper, then cook them in the skillet until golden brown and cooked through (about 7-8 minutes per side, depending on thickness). Transfer the chicken to a plate and cover it to keep warm.
- In the same skillet, add the chopped garlic and sauté for a minute, being careful not to burn it.
- Add the tomatoes and cook until they start to break down, releasing their juices, about 2-3 minutes.
- Reduce the heat to medium-low and add the avocado and basil to the skillet, stirring gently without breaking up the avocado cubes too much.
- Squeeze in the lemon juice and add a drizzle of extra virgin olive oil, stirring everything together. If desired, you can add red pepper flakes for a spicy kick.
- Return the chicken to the skillet with all the ingredients and let the flavors meld for a minute.
- Adjust salt and pepper if necessary and serve immediately.
