Chocolate Tart with Cream and Strawberries

Ingredients

For the shortcrust pastry:
- 250 g of 00 flour
- 125 g cold butter, cubed
- 100 g powdered sugar
- 1 large egg
- A pinch of salt
- Grated zest of 1/2 lemon (optional)

For the chocolate ganache:
- 200 g good-quality dark chocolate
- 200 ml fresh cream

For the topping:
- 250 ml fresh whipping cream
- 2 tablespoons powdered sugar
- Fresh strawberries to taste
- Chocolate shavings or cocoa powder for decoration (optional)
Preparation

Start by preparing the shortcrust pastry. In a bowl, mix the flour with the powdered sugar and the pinch of salt. Add the cold butter cut into cubes and quickly work with your fingertips until you get a sandy mixture. Add the egg and lemon zest (if used), and work until you get a homogeneous dough. Form a ball, wrap it in plastic wrap and let it rest in the fridge for at least 30 minutes.

Roll out the dough into an even layer and line a tart pan, prick the base with a fork and bake at 180 °C for about 20-25 minutes or until golden. Once ready, let it cool completely.

Prepare the chocolate ganache. Break the chocolate into a bowl. In a saucepan, bring the cream almost to a boil and pour it over the chocolate. Let it rest for a minute and then stir until you get a smooth and homogeneous cream. Pour the ganache over the cooled tart base and let it set in the refrigerator for at least 1 hour.

Whip the fresh cream with the powdered sugar until firm and fluffy. Place the whipped cream in a piping bag with a star tip and decorate the surface of the now-set ganache with dollops of cream.

Wash the strawberries, pat them dry, halve or slice them and arrange on the cream. If desired, further decorate with chocolate shavings or a dusting of cocoa powder.
