Chocolate Truffles
24/02/2024Chocolate truffles are a delicious and refined dessert inspired by the famous French praline. Here is the classic recipe:
Ingredients
- 250 g of good quality dark chocolate
- 150 ml of fresh cream
- 50 g of butter
- Cocoa powder as needed
- (Optional) Vanilla extract, liqueurs or citrus zests for flavoring
Preparation
- Finely chop the chocolate and place it in a heat-resistant bowl.
- In a saucepan, heat the cream until it starts to boil.
- Pour the hot cream over the chopped chocolate and let it rest for a couple of minutes without stirring, to allow the chocolate to melt.
- Add the butter in pieces and (if desired) the vanilla extract or a tablespoon of liqueur of your choice. Stir everything together until the butter has completely melted and you have a homogeneous mixture.
- Cover the bowl with plastic wrap and place it in the refrigerator for at least 3-4 hours, or until the ganache has hardened.
- When the mixture is well chilled and solid, use a teaspoon or an ice cream scoop to form balls.
- Roll each ball in cocoa powder until completely coated. If you prefer, you can also roll the truffles in chopped hazelnuts, pistachios, shredded coconut or powdered sugar.
- Store the truffles in the refrigerator until ready to serve.
Trivia
The name “truffle” in this context derives from the similarity of chocolate truffles to real truffles (the prized mushrooms), particularly for their irregular shape and the dark color given by the external cocoa powder. Furthermore, just like truffles are a hidden treasure underground, these sweets are a delicious secret hidden under a dusty layer of cocoa. Being small and exquisite, they are often served as an after-dinner treat or on festive occasions.
