- 250 grams of 00 flour
- 2 large eggs
- 30 grams of unsweetened cocoa powder
- 200 grams of white chocolate
- 100 milliliters of fresh cream
- 1 egg yolk (to seal the ravioli)
- Powdered sugar (for decoration)
- Butter (optional, for serving)

Prepare the cocoa pasta by sifting the flour and cocoa into a large bowl. Form a well in the center and crack in the eggs. Using a fork, begin incorporating the flour and cocoa with the eggs, then knead by hand until you obtain a smooth and homogeneous dough. If necessary, add a little water or flour to reach the desired consistency. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Meanwhile, prepare the white chocolate filling. Chop the white chocolate and place it in a bowl. Heat the cream in a saucepan until it just reaches a simmer, then pour it over the white chocolate. Wait one minute, then stir until you obtain a smooth ganache. Let it cool, then refrigerate until firm.

Roll out the cocoa pasta using a pasta machine or rolling pin until you have thin sheets.

Place small mounds of white chocolate ganache on half of the pasta sheets, spacing them appropriately.
