Cod Medallions and Broccoletti

Cod medallions are a simple and elegant dish, and paired with broccoletti they become a complete and very tasty meal. Here is the recipe:

Ingredients

  • 4 cod medallions (about 150-200 g each)
  • 300 g of broccoletti
  • 2 garlic cloves
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Lemon juice (optional)
  • 1 tablespoon of chopped parsley (for garnish)

Preparation

  1. Prepare the broccoletti: clean them by removing the outermost leaves and the too fibrous parts. Cut the florets so as to obtain small and equal ones for uniform cooking and boil them in salted water for about 7-8 minutes or until they are tender but still crunchy. Drain and set aside.

  2. While the broccoletti cool, you can proceed to cooking the cod medallions. Heat 2 tablespoons of extra virgin olive oil in a pan over medium-high heat and add the crushed garlic cloves to flavor the oil.

  3. Add the cod medallions to the pan and cook for about 3-4 minutes per side, or until golden and cooked to the desired doneness. Season with salt and pepper during cooking.

  4. In another pan, heat the remaining 2 tablespoons of oil and add the drained broccoletti. Sauté them quickly over high heat with a pinch of salt and pepper, just enough time to heat them and flavor them.

  5. Plate the cod medallions and serve them accompanied by the sautéed broccoletti. If desired, you can complete the dish with a drizzle of raw oil, a squeeze of fresh lemon juice and a sprinkle of chopped parsley for a touch of freshness and color.
