Coffee Mousse with Cigar

Ingredients
For the coffee mousse:
- 200 ml fresh cream
- 100 g dark chocolate
- 2 egg yolks
- 40 g sugar
- 2 sheets of gelatin (or 4 g powdered gelatin)
- 60 ml strong espresso coffee
For the chocolate cigars:
- 125 g dark chocolate
- 50 g butter
- 50 g powdered sugar
- 1 egg yolk
- 30 g flour
- Cocoa powder, for finishing
Preparation
Coffee mousse:
- Start by soaking the gelatin sheets in cold water for about 10 minutes.
- Meanwhile, melt the dark chocolate in a double boiler and let it cool slightly.
- Whip the egg yolks with the sugar until you obtain a light and frothy mixture.
- Heat the espresso coffee in a small saucepan, squeeze out the soaked gelatin and dissolve it in the hot coffee.
- Add the coffee and gelatin mixture to the melted chocolate and stir well.
- Whip the fresh cream until firm but not over-whipped.
- Gently fold the whipped cream into the chocolate and coffee mixture using an upward motion to avoid deflating the mixture.
- Pour the mousse into cups or glasses and let it set in the refrigerator for at least 3 hours.
Chocolate cigars:
- Melt the chocolate in a double boiler and mix with the butter until you obtain a homogeneous mixture.
- Transfer the mixture to a bowl and let it cool slightly.
- Add the egg yolk and powdered sugar, and mix well.
- Incorporate the sifted flour and work the dough until it becomes smooth.
- Spread the dough on a baking tray lined with parchment paper, shaping it into small cigars, and bake in a preheated oven at 180 °C for about 10-15 minutes or until crispy.
- Remove from the oven and let them cool completely. You can roll them in cocoa powder to better resemble real cigars.
Place the chocolate cigars next to the coffee mousse before serving.
