Cream and Coffee Muffins
17/11/2023Coffee and cream muffins are a delicious combination of the sweetness of cream and the intensity of coffee. They are perfect for breakfast or an energizing snack. Here is the recipe:
Ingredients
- 250g flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- A pinch of salt
- 2 eggs
- 100g sugar
- 100ml vegetable oil
- 125ml fresh cream
- 80ml cold espresso coffee
- 1 teaspoon vanilla extract (optional)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining it with paper liners.
- In a bowl, sift and mix together the flour, baking powder, baking soda, and salt.
- In another bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
- Add the vegetable oil, cream, cold coffee, and vanilla extract, continuing to mix until the mixture is homogeneous.
- Combine the dry ingredients with the wet ingredients, mixing as little as possible: the mixture should be combined, but not overworked.
- Fill the liners up to 2/3 of their capacity with the batter.
- Bake the muffins for about 20 minutes or until a toothpick inserted in the center of the muffin comes out clean.
- Let the muffins cool on a wire rack before serving.
If you want to add an Italian touch, you could sprinkle the muffins with a bit of powdered sugar mixed with ground coffee to intensify the flavor.

Coffee is an excellent addition to sweets not only for its flavor, but also because it can enhance the perception of chocolate and caramel flavors. Additionally, if you prefer a more intense coffee taste in your muffins, you can increase the amount of espresso or add instant coffee powder to the batter.
