Creamy Curry Rice Timbales

The creamy curry rice timbales are an original idea that combines the creaminess of rice with the spicy flavor of curry and the deliciousness of melting cheese. Here is the recipe to prepare them.

Ingredients

  • 200 g of Arborio or Carnaroli rice
  • 1 small onion finely chopped
  • 1 tablespoon of extra virgin olive oil
  • 1/2 teaspoon of curry powder (or to taste)
  • 500 ml of vegetable broth
  • 100 g of melting cheese (such as mozzarella or provola), cut into cubes
  • 50 g of grated Parmesan cheese
  • 2 eggs
  • Salt, to taste
  • Butter and breadcrumbs for greasing and sprinkling the molds

Preparation

  1. Prepare the vegetable broth and keep it warm over low heat.
  2. In a large pan, sauté the chopped onion in the extra virgin olive oil until it becomes translucent.
  3. Add the rice and toast it for a few minutes until the grains become shiny.
  4. Sprinkle the curry over the rice and mix well to flavor it.
  5. Start adding the vegetable broth, one ladle at a time, waiting for the previous one to be absorbed by the rice before adding the next. Continue this way for about 18 minutes or until the rice is al dente.
  6. Turn off the heat and incorporate the grated Parmesan. Let the risotto cool slightly.
  7. Once the risotto has cooled, add the beaten eggs and mix well to combine everything.
  8. Prepare the timbale molds (or muffin tins) by greasing them with a little butter and sprinkling with breadcrumbs.
  9. Fill each mold with a first layer of rice, then add some cubes of melting cheese in the center and cover with more rice.
  10. Bake in a preheated oven at 180 °C for about 15-20 minutes, or until the surface of the timbales is golden and crispy.
  11. Let them rest for a few minutes before unmolding and serving them still hot.
