Crispy Prawns

Preparing crispy prawns is a fantastic idea for a main course or an elegant appetizer. Here’s how to give an Italian touch to this delicacy with a simple and tasty recipe.

Ingredients

  • 12 fresh medium-sized prawns
  • Wheat flour, as needed
  • Corn flour (for extra crispiness), as needed
  • 2 eggs
  • Breadcrumbs, as needed
  • Salt, to taste
  • Pepper, to taste
  • Extra virgin olive oil or frying oil

Preparation

  1. Start by cleaning the prawns. Remove the head, peel off the shell leaving the last part of the tail, and make a light incision on the back to remove the intestine. Then rinse them under cold water and pat them dry well.
  2. Prepare three shallow dishes: put the wheat flour in one, beat the eggs with a pinch of salt and pepper in another, and the mix of breadcrumbs and corn flour in the third.
  3. Pass each prawn first in the wheat flour, then in the egg, and finally in the breadcrumb and corn flour mix, making sure to coat them completely.
  4. Heat plenty of oil in a pan or fryer until it reaches a temperature of about 180 °C.
  5. Immerse the prawns in the hot oil and fry them until golden and crispy, it will take about 2-3 minutes.
  6. Drain them on absorbent paper to remove excess oil.
  7. Serve them hot, accompanied by lemon wedges.

Trivia

Crispy prawns can be accompanied by a variety of sauces, but a typically Italian one is garlic and oil sauce, made with extra virgin olive oil, crushed garlic and chopped red chili, or a simple mayonnaise flavored with lemon and aromatic herbs.
