Double Chocolate Mud Cake

Ingredients
- 200 g good quality dark chocolate
- 200 g butter
- 250 g granulated sugar
- 150 ml water
- 2 teaspoons instant coffee (optional)
- 150 ml milk
- 2 eggs
- 1 teaspoon vanilla extract
- 200 g self-raising flour (or 00 flour with one teaspoon baking powder)
- 30 g cocoa powder
For the chocolate ganache:
- 200 ml fresh cream
- 200 g good quality dark chocolate
Preparation
- Preheat the oven to 160 °C and prepare a cake tin by greasing and flouring it or lining it with baking paper.
- Break the dark chocolate into small pieces and place it in a saucepan with the butter, sugar, water, and instant coffee. Heat the mixture over medium-low heat, stirring until all ingredients are completely melted.
- Remove the mixture from the heat and let it cool slightly. Add the milk, eggs, and vanilla extract, stirring well to combine.
- Sift the flour and cocoa powder and gently fold them into the liquid mixture until a smooth batter forms.
- Pour the batter into the prepared tin and bake for about 1 hour or until a skewer inserted into the centre of the cake comes out clean, though the cake should remain moist inside.
- Allow the cake to cool in the tin for about 10 minutes, then transfer it to a wire rack to cool completely.
For the ganache:
- Heat the fresh cream in a saucepan until it just begins to simmer.
- Remove the cream from the heat and add the chopped dark chocolate, stirring until a smooth and homogeneous cream forms.
- Let the ganache cool slightly before spreading it over the cooled cake.
The double chocolate Mud Cake is now ready to serve. Remember that this cake has a particularly moist and dense texture, almost like mud (hence the name “Mud Cake”), making it irresistibly delicious.
