Dunking Biscuits

Dunking biscuits are simple and delicious little treats, perfect for dipping in milk or coffee. Here is a classic recipe to prepare them:

Ingredients

  • 500 g of 00 flour
  • 200 g of granulated sugar
  • 100 g of butter at room temperature
  • 2 whole eggs
  • 2 egg yolks
  • 8 g of baker’s ammonia or, alternatively, 1 packet of baking powder
  • Grated zest of 1 lemon
  • 1 pinch of salt
  • Milk as needed (if necessary for the dough)

Preparation

  1. In a large bowl, cream the softened butter with the sugar until you obtain a creamy mixture.
  2. Add the whole eggs and the yolks, one at a time, and continue mixing.
  3. Incorporate the grated lemon zest and a pinch of salt.
  4. Add the baker’s ammonia dissolved in a little milk or the baking powder and start adding the flour little by little.
  5. Work the dough until it is smooth and homogeneous. If it is too dry, add a little milk until the desired consistency is reached.
  6. Divide the dough into equal parts and form long, slightly flattened rolls.
  7. Place the rolls on a baking tray lined with parchment paper and bake in a preheated oven at 180 °C for about 15-20 minutes or until the biscuits are golden.
  8. Once ready, remove the rolls from the oven and, while still hot, cut them diagonally into pieces about 1 cm thick to obtain the biscuits.
  9. Put the cut biscuits back on the trays and bake again at 160 °C for 5-10 minutes to dry them out and make them crunchy.
  10. Let them cool completely before serving.
