Farro and Shrimp Salad
17/11/2023Farro and shrimp salad is a fresh and tasty dish, ideal for hot summer days. Italian cuisine loves to play with sea flavors and land products, so this salad is perfect for a Mediterranean touch.
Ingredients
- 150 g pearl farro
- 200 g cleaned shrimp
- Arugula to taste
- Cherry tomatoes to taste
- 1 lemon
- Extra virgin olive oil to taste
- Salt and pepper to taste
- A bunch of fresh parsley
- 1 garlic clove (optional)
Preparation
- Start by cooking the farro in salted water according to the package instructions. Once cooked, drain and let it cool.
- Cook the shrimp in a pan with a drizzle of oil and a garlic clove, if desired. Season with salt and pepper and deglaze with the juice of half a lemon. Let the shrimp cool once cooked as well.
- Wash the cherry tomatoes and cut them in half. Wash and dry the arugula.
- In a large bowl, mix the farro with the cherry tomatoes, arugula, and shrimp. Dress with extra virgin olive oil, salt, pepper, and the remaining lemon juice.
- Sprinkle with finely chopped fresh parsley.
- Let it rest in the refrigerator for at least half an hour before serving to allow the flavors to meld.
